Multifaceted studies on the functions of luminacoids in gut were conducted. We found: (1) absorption of some minerals, such as calcium, magnesium and phosphorus, was improved in rats by extrusion of some brans. (2) Konjac mannan increased the production of vitamin B6 in the large intestine, some of which was absorbed and utilized by the host rats. (3) Type 3 resistant starch (RS3) increased fecal weight, similar to insoluble dietary fiber and produced more short-chain fatty acids in the cecum, similar to soluble dietary fiber. (4) A brown rice diet increased short-chain fatty acids in pig and suppressed the pH of the large intestinal contents, due to increased undigested starch (RS1). (5) High amylose starch (HAS) was more fermentable in the cecum than retrograded HAS, however, the latter exerted its effect in the colon. In conclusion, the physiological effects of RS depend on its type and origin.
