There are non-digestible carbohydrates, including monosaccharides, that have distinct physical behaviors in the body and distinct energy values. It is important to determine the absorption and fermentability of each substance; furthermore,if possible,it is desirable to evaluate these parameters in humans. The purpose of this study was to determine available energy values of the monosaccharides,D -mannose,D -sorbose,and D -allose,since these monosaccharides have not yet been fully studied. A randomized single-blind crossover study was conducted among healthy subjects to evaluate fermentability in the large intestine, urinary excretion, and carbohydrate energy expenditure (CEE) of these sugars. Fructooligosaccharides were used as reference. After fasting overnight (at least for 12 h),subjects consumed 10 g of D -mannose,D -sorbose,D -allose,or fructooligosaccharides dissolved in water. End-expiratory gas was continuously collected for 14 h after ingestion; breath hydrogen concentration was assessed to determine fermentability of the sugar based on the area under the curve. Urine samples were collected up to 48 h after ingestion to determine excretion rates of the monosaccharides using high performance liquid chromatography. Additionally, the volume of breath oxygen, carbon dioxide, and nitrogen in urine were assessed for 3 h to determine CEE. Rate of fermentability and urine excretion were 93% and 0% for D -mannose,24% and 25% for D -sorbose,and 6% and 67% for D -allose,respectively. Thus, the utilizable energy values of D -sorbose and D -allose were estimated to be approximately zero.
Key words: D -mannose,D -sorbose,D -allose,fermentability,urinary excretion
