Dietary fiber would decrease mineralbioavailability because it may have cation exchange capacity, bindmineral ion and form complexes difficult to absorb in intestinallumen, as phytin does. But in actually, many dietary fibers havealready appeared to be a good source of minerals especially inmineral deficiency, even if some dietary fibers containedconsiderable amount of phytin. Moreover, some dietary fibers andother luminacoids, proposing term as dietary components which arenot digested and/or absorbed in the human small intestine and whichexert physiological effect that are useful in maintaining goodhealth via gastrointestinal tract, appeared to improve mineralbioavailability.
